The traditional method is a process where corn is cooked in a limestone solution and is then left to rest before rinsing with cold water. Next, the corn is drained and milled into a corn dough that will be used to make tortillas . This method, can take several hours.
The corn flour method only requires to add water to this flour and mix it in order to create the dough that can be immediately used to make tortillas. Through this method, it only takes a few minutes to prepare the corn dough.
