On
May 3, 1949, the first processed corn flour production plant in the
world was inaugurated in Cerralvo, Nuevo León, signaling the
beginning of
GRUMA,
this would begin an industrialization process for transforming
nixtamalized corn into flour. This allowed the product to stay fresh
longer, and through this process, the company completely
revolutionized the selling, distribution and production processes of
all food products made from this grain.
Since
GRUMA’s foundation, technological research and development have been
its pillars. The company’s cleverness can be seen through the fact,
that it created a nonexistent industry in an unknown market
environment, and committed itself to bringing about a transformation
of processes that had been in effect for millennia.

In
Mexico, corn tortillas were always made the traditional
way, with processed corn dough, until GRUMA invented the
appropriate technology to make them from processed corn
flour. This was a technological leap of almost 5,000
years, and it resulted in a revolutionary simplification
of the process. Artisanal methods, that depended on
crude grinders and pestles, were finally left behind.
But of course, this did not happen
overnight. 60 years of continuous research allowed GRUMA
to position itself as the world leader in the production
of processed corn flour and tortillas, as well as other
products derived from corn and grains. |
